Vegetables Can Be Yummy II – “Veg Every Day” Book Review

I love to watch essiebuttonvlogs. Aslan and Estée are just hilarious!

In one video, Aslan cooks a meal, as awsome as ever. I totally wanted to copy it, so that’s what my boyfriend and I did.

It’s a herby, peanutty, noodly salad

The Ingredients:

  • 150g Thai rice noodles
  • 150g French beans
  • 2 Large handfuls of peanuts
  • 2 tbs Rice wine vinegar
  • 1 tsp Soy sauce
  • 1 tsp Sesame oil
  • 1 Lime, juice and zest
  • 1 clove garlic, grated
  • ½ Red chilli, finely chopped
  • 1 small cucumber, peeled and thinly sliced
  • 4 Spring onions, sliced
  • 1 ½ tbs each of Mint, coriander and basil

It was such a sucess, everyone loved the new, unusual scent. I was so totally into the recipe that I risked buying the book without knowing the other recipes (there’s a super sale on amazon.co.uk).

It was a total hit!

We’ve cooked four other meals so far and they were equally nice, fresh and healthy. The persons enjoying the meals were equally surprised by how tasty this healthy dishes were.

That’s what I did:

Stuffed cabbage leaves (D: Gefüllte Wirzblätter)

Pinto bean chili (D: Borlottibohnen-Chili)

Kale and mushroom lasagne (D: Kohl-Pilze-Lasagne) (we altered it and did spinach and mushroom lasagne or “Spinat-Pilze-Lasagne)

Spiced spinach and potatoes (D: Gewürzter Spinat und Kartoffeln)

The author has a very nice philosophy. In the foreword to this book, he writes:

“The object of the exercise is, unambiguously, to persuade you to eat more vegetables. … Meat is so familiar, so convenient, the easy route to something that we instantly recognise as a ‘proper meal’. I want to show you how straightforward it can be to embrace vegetables in the same way.”

I would recommend the book to everyone interested in vegetable / vegetarian (or even vegan) / healthy / flavorful cooking ! 🙂 Rating: *****

Go and get it, it’s a good investment (and probably my favorite recipe book of all time :D)

PS: I am planning on checking out some other books of Hugh Fearnley-Whittingstall, too as I became a fan (like The River Cottage Year” or “Fruit Every Day”…).
